Bentonite helps in the clarification process where proteins may be causing cloudiness. Add to the must prior to fermentation and stir well, this is a precautionary step usually taken with white grape must. 

Bentonite works best if used after fermentation and prepared as a slurry and added to the finished wine. The slurry can be made with water or a sample of the wine to be treated.
